From Middle Persian blyštn' (brištan, “to roast”), ultimately from a Western Iranian derivative of Proto-Indo-Iranian *bʰr̥ȷ́yáti, from Proto-Indo-European *bʰr̥ǵ-yé-ti, from *bʰerǵ ~ *bʰreǵ (“to roast, fry”). Cognate with Sanskrit भृज्जति (bhṛjjati), Latin frigo (whence English fry) and Ancient Greek φρύγω (phrúgō).
