Etymology

Compound of (yabu, thicket) +‎ 蕎麦 (soba, buckwheat noodles). Originally the name of a prominent soba restaurant in the Edo period, probably so named for the bamboo thicket in the garden where the first such location was established. This business became known for its style of soba noodles, using buckwheat flour milled with the light-green endocarp still on the grain, coloring the noodles.
