From gäipen (to lust, especially for food; to look and wait greedily to get a bite) +‎ Männchen (little man). The former is either an unshifted relict form or of Low Franconian origin. It is identical with Middle Dutch gîpen (to gape, gasp, open one’s mouth greedily), from Old Dutch gīpōn, whence also Dutch gijpen (to gasp for air).
