From Middle High German schimel, schimmel, from Old High German skimbal (“mould”). The expected Middle High German form is seemingly unattested *schimbel, but all three forms (schimel, schimmel, *schimbel) would have yielded modern German Schimmel. Cognate with Dutch schimmel (“mould”).
