According to the answer, this is a corruption of "liver and lights". Lights in this sense referred to the lung. To beat the "liver and lights" out harked back to an earlier age when people ate animal organs more often than we do now. I'm sorry, I do not have a definite reference fo r this derivation, in fact I was looking for it when I came across your entry.
