Etymology

From Old Korean *수블 (swùpùl), as seen in Jilin leishi forms 酥孛 and 蘇孛 (*swupul~*swuWul).

A form containing some bilabial consonant was perhaps used as late as the 15th century; see 數本 (*swùWùl) in the Chaoxian Guan Yi Yu (朝鮮官譯語, early 15c.). However, such form is not directly attested in the currently available Middle Korean corpus, making this word one of the earlier examples of the /p > W > w/ chain shift.

The form 수울 (swuwul) reflects rounding of the second vowel due to the above shift, whereas this form shows typical dissimilation of the same vowel caused by the preceding /wu/.
