Etymology

According to Ačaṙean, a blend of եղ (, oil) +‎ բրինձ (brinj, rice), created by linguistic purists in Constantinople. But such an artificial creation is unlikely as the word is recorded in the dialect of Urmia–Salmas. It is also found as a Grabar gloss to Ashkharhabar փիլաւ (pʻilaw) in HHB.

More likely belongs with Old Armenian աղանձեմ (ałanjem), Armenian աղանձ (aġanj), and especially dialectal Armenian եղնձել (eġnjel, to roast corn).
