Etymology
Of unknown origin. Byzantine Greek τσαγανός (tsaganós) / Greek τσαγανός (tsaganós, “crab”) has been found in sources from Constantinople and Keşan; there being a Pontic Greek τσαγάνα (tsagána, “crab”). Whereas Byzantine Greek ζαγάνος (zagános), Romanian zăgan, Ottoman Turkish زغنوس ,زاغنوس (zağanoz) means a vulture, being from Persian زغن (zağan), variant of Persian زاغ (zâğ).
