From Old Georgian ხუარბალი (xuarbali), from Middle Persian (hwʾlbʾl /⁠xwārbār⁠/, food and drink), whence Persian خواربار (xvârbâr); see it for more. Cognate with Mingrelian ქობალი (kobali) and Laz ქოვალი (kovali).

The უა (ua) <-> (o) alteration isn't unfamiliar to Kartvelian languages as seen in Old Georgian თუალი (tuali): Mingrelian თოლი (toli). As for (x) <-> (k), it is hard to explain.
