From Middle Persian (srdʾl /⁠sālār⁠/), a pre-Middle Persian compound of 𐭫𐭥𐭩𐭱𐭤 (LOYŠE /⁠sar⁠/, head) + (-dʾr /⁠-dār⁠/, -holder, -keeper), with the regular phonetic shift *sar(a)-dàr(a)- > *sardàr > *sarlàr > sālār. Compare دل (del), گل (gol) for the phonetic change. Note Old Armenian սաղար (sałar), an Iranian borrowing. Doublet of سردار (sardâr).
