Borrowed (initially in forms like Brinse) from Romanian brânză (formerly brînză), of uncertain origin, possibly borrowed from Albanian brëndës (“intestines”). Originally referred to cheeses prepared in a sheep's stomach by reacting with the rennet inside.[1]
